Halibut With Lemon Sauce

Serves : 4

Ingredients :

4 boneless halibut steaks, about 150g/5 oz each

100g/4 oz dried breadcrumbs

1 tbsp dried parsley

1 large egg, lightly beaten

black pepper

For the Sauce :

300 ml/0.5 pint reduced calorie mayonnaise

1 tbsp lemon juice

1 tbsp chopped fresh or 1 tsp dried parsley

1 tbsp chopped fresh or 1 tsp dried chives

1 tsp prepared English mustard

Preparation :

  1. Preheat oven to 220C/425F/Gas 7. Grease a large ovenproof dish. Wash the fish and pat dry with kitchen paper. Mix the breadcrumbs with the dried parsley, then spread it out on a sheet of greaseproof paper
  2. Season the egg with a little salt and pepper. Dip the fish in the egg then in the breadcrumb mixture until coated on all sides. Transfer to the dish
  3. Bake for 8-10 minutes or until the fish flakes easily and the coating is light golden
  4. Meanwhile, make the sauce. Mix all the ingredients in a small bowl. Season with remaining sale and pepper. Serve with the fish
