Hoisin, Ginger & Pineapple Pork Ribs Recipe

Serves : 4-6

Cooking Time : About 1 hour

Oven Temperature : 190C/375F/Gas Mark 5

Ingredients :

900g (2 lbs) lean pork spare ribs

75 ml (5 tbsp) hoisin sauce

45 ml (3 tbsp) pineapple juice

5 ml (11 tsp) dried ginger

2 garlic cloves, Crushed

For Pineapple & Green Pepper Relish

1 Green pepper, deseeded and very finely chopped

0.5 small can drained pineapple, roughly chopped

10 ml (2tsp) sweet chilli sauce

0.5 lime, juice

Preparation :

  1. Take lean pork spare ribs, line a roasting pan with foil or non-stick mat.
  2. Place ribs into pan and cook covered with foil for 15 minutes.
  3. Mix together hoisin sauce, pineapple juice, ginger and garlic.
  4. Remove top covering of foil from pan and spoon sauce over ribs. Return to the oven and for approx. 1 hour or until ribs are sticky and browned to your liking. (Baste a couple of times to make sure they go really stick!)

Pineapple and Green Pepper Relish

Into a bowl put green pepper, pineapple, sweet chilli sauce and juice 0.5 lime. Serve with fruity bean rice, and pineapple green pepper relish
