Lamb Steaks with Mint & Mango Chutney

Ingredients:
- 2 lamb leg steaks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh mint, chopped
- 3 tbsp mango chutney
- 1 tbsp lemon juice
Instructions:
- Preheat Oven: Set to 200°C (400°F).
- Marinate Lamb: Mix olive oil, garlic, cumin, coriander, salt, and pepper. Rub over the steaks and let them sit for 10 minutes.
- Sear Steaks: Heat a pan over medium-high heat and sear the lamb for 2 minutes per side until browned.
- Bake: Transfer to an oven-safe dish, spread mango chutney over the steaks, and drizzle with lemon juice. Bake for 12-15 minutes for medium doneness.
- Garnish & Serve: Sprinkle with fresh mint and serve with roasted vegetables or couscous.
