Make Your Own BBQ Rub’s

Basic “Memphis Style” BBQ Rub :

1 cup brown sugar

0.5 cup granulated sugar

0.5 cup kosher salt

1 tbsp onion powder

2 tbsp granulated garlic

1.5 tsp cayenne

1 tsp finely ground black pepper

2 tsp dry mustard (powder)

0.25 cup mild chilli powder

1 tsp ground cumin

0.25 cup + 2 tbsp paprika

Place the brown sugar in a coffee grinder and pulse until lightly powdered. Transfer to a small mixing bowl and add the remaining ingredients. Stir until well mixed. Store in an airtight container for up to 2 months

Blackening Seasoning :

3 tbsp paprika

2 tbsp granulated garlic

2 tsp kosher salt

1 tsp onion powder

1 tsp dried thyme

1 tsp cayenne

0.5 tsp dried oregano

1 tsp dark chilli powder

Combine all the ingredients in a small mixing bowl and stir by hand until well mixed. Store in an airtight container for up to 2 months

If you like it spicier, increase the cayenne pepper by a tsp or two

Fresh Herb Rub :

0.25 cup chopped fresh flat-leaf parsley

1 tbsp chopped oregano leaves

1 tbsp chopped fresh thyme

0.25 cup kosher salt

1 tbsp sea salt

2 tbsp coarsely ground black pepper

2 garlic cloves, minced

2 tbsp extra virgin olive oil

Combine all the ingredients in a small mixing bowl and stir by hand until well mixed. Use on the same day as made
