Ingredients:
- 1.5 lbs beef stew meat (cubed)
- 4 medium potatoes, peeled and diced
- 4 large carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp flour (optional, for thickening)
- 2 tbsp olive oil
Instructions:
- Sear the Beef:
-
- Set your Ninja Multi-Cooker to the “Sear/Sauté” mode. Add the olive oil and let it heat up.
- Add the beef stew meat in batches (don’t overcrowd) and brown it on all sides, about 5-7 minutes. Remove and set aside.
- Sauté the Vegetables:
-
- In the same pot, sauté the onions and garlic for about 2-3 minutes, until softened.
- Combine Everything:
-
- Add the browned beef back to the pot. Then add the potatoes, carrots, beef broth, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Stir everything together to combine.
- Slow Cook:
-
- Close the lid and set the Ninja Multi-Cooker to “Slow Cook” on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
- Thicken the Stew (optional):
-
- If you prefer a thicker stew, mix 2 tbsp of flour with a little water to make a slurry and stir it into the stew 30 minutes before the end of cooking.
- Serve:
-
- Remove the bay leaf and adjust seasoning with salt and pepper as needed. Serve hot!
This recipe should make a hearty and flavourful beef stew!
