- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup long-grain white rice (rinsed)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 2 cups chicken broth
- 1/2 cup frozen peas (optional)
- 1/2 cup shredded cheese (optional for garnish)
Instructions:
- Prep the chicken:
-
- Season the chicken breasts with paprika, salt, and pepper.
- Sauté:
-
- Turn on the Ninja Multi-Cooker and set it to the “Sauté” function. Heat olive oil.
- Add the chicken breasts to the pot and brown both sides (about 3-4 minutes per side). Remove the chicken and set it aside.
- Sauté the veggies:
-
- Add the diced onion and garlic to the pot. Sauté for 1-2 minutes until softened.
- Add the rice and liquid:
-
- Add the rinsed rice to the pot and stir it into the onions and garlic.
- Pour in the chicken broth and stir to combine.
- Pressure cook:
-
- Place the chicken breasts on top of the rice.
- Close the lid, ensuring the vent is set to “Seal.”
- Set the Ninja Multi-Cooker to “Pressure Cook” on high for 10-12 minutes (depending on the thickness of the chicken).
- After cooking, allow it to naturally release pressure for about 5 minutes, then manually release the remaining pressure.
- Finish and serve:
-
- Remove the chicken breasts and shred or slice them.
- Stir the rice, adding frozen peas if desired.
- Garnish with shredded cheese, if desired.
Serve your delicious chicken and rice hot!
