RECIPE FOR CHICKEN AND RICE IN NINJA MULTI COOKER

Here’s a simple recipe for making chicken and rice in the Ninja Multi-Cooker:

Ingredients:

  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup long-grain white rice (rinsed)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 2 cups chicken broth
  • 1/2 cup frozen peas (optional)
  • 1/2 cup shredded cheese (optional for garnish)

Instructions:

  1. Prep the chicken:
    • Season the chicken breasts with paprika, salt, and pepper.
  2. Sauté:
    • Turn on the Ninja Multi-Cooker and set it to the “Sauté” function. Heat olive oil.
    • Add the chicken breasts to the pot and brown both sides (about 3-4 minutes per side). Remove the chicken and set it aside.
  3. Sauté the veggies:
    • Add the diced onion and garlic to the pot. Sauté for 1-2 minutes until softened.
  4. Add the rice and liquid:
    • Add the rinsed rice to the pot and stir it into the onions and garlic.
    • Pour in the chicken broth and stir to combine.
  5. Pressure cook:
    • Place the chicken breasts on top of the rice.
    • Close the lid, ensuring the vent is set to “Seal.”
    • Set the Ninja Multi-Cooker to “Pressure Cook” on high for 10-12 minutes (depending on the thickness of the chicken).
    • After cooking, allow it to naturally release pressure for about 5 minutes, then manually release the remaining pressure.
  6. Finish and serve:
    • Remove the chicken breasts and shred or slice them.
    • Stir the rice, adding frozen peas if desired.
    • Garnish with shredded cheese, if desired.

Serve your delicious chicken and rice hot!
