  • 1 teaspoon sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 ½ cups warm water (around 110°F)
  • 2 tablespoons olive oil (optional)

Instructions:

  1. Mix the dry ingredients: In a large bowl, combine the flour, salt, sugar, and yeast.
  2. Add the water: Pour in the warm water (and olive oil if using) and stir until a sticky dough forms.
  3. Let it rise: Cover the bowl with a damp towel or plastic wrap, and let it rise for 12-18 hours at room temperature. It should double in size and bubble.
  4. Preheat the oven: About 30 minutes before you’re ready to bake, preheat your Le Creuset Dutch oven (or casserole dish) with the lid on at 450°F.
  5. Shape the dough: Once the dough has risen, turn it out onto a well-floured surface and fold it over on itself a few times. Form it into a round shape and let it rest for 20 minutes.
  6. Bake the bread: Carefully remove the preheated Dutch oven from the oven, place the dough inside, and cover it with the lid. Bake for 30 minutes. After 30 minutes, remove the lid and bake for an additional 15-20 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.
  7. Cool: Allow the bread to cool before slicing.
