RECIPE FOR CHICKEN TIKKA MASALA IN SLOW COOKER
Here’s a simple recipe for slow cooker chicken tikka masala:
Ingredients:
- 2 lbs chicken breast or thighs, cut into bite-sized pieces
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (15 oz) tomato sauce
- 1 can (14 oz) coconut milk or heavy cream (for a richer sauce)
- 1/2 cup plain yogurt (preferably full-fat)
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prep the chicken: Place the chicken pieces in the slow cooker.
- Make the sauce: In a mixing bowl, whisk together the tomato sauce, coconut milk (or heavy cream), yogurt, garlic, ginger, and all the spices (garam masala, cumin, turmeric, chili powder, paprika, coriander, cinnamon). Stir in a pinch of salt and pepper.
- Cook: Pour the sauce mixture over the chicken in the slow cooker, and stir to combine. Drizzle olive oil over the top for extra richness.
- Slow cook: Cover the slow cooker and cook on low for 6–7 hours, or on high for 3–4 hours. The chicken should be tender and cooked through.
- Finish and serve: Once cooked, taste and adjust seasoning if needed. Garnish with chopped cilantro.
