RECIPE FOR CHILLI IN SLOW COOKER
Here’s a simple recipe for slow cooker chili:
Ingredients:
- 1 lb ground beef (or turkey if you prefer)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (optional)
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 cup beef or vegetable broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional for heat)
- Salt and pepper to taste
Optional toppings:
- Sour cream
- Shredded cheese
- Chopped green onions
- Fresh cilantro
Instructions:
- Brown the beef: In a skillet, brown the ground beef over medium-high heat until fully cooked, breaking it up into small pieces. Drain any excess fat.
- Combine in slow cooker: Transfer the cooked beef to the slow cooker and add the onion, garlic, bell pepper (if using), beans, diced tomatoes, tomato paste, and broth.
- Season: Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
- Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The chili should be thick and flavourful.
- Serve: Once cooked, give the chili a good stir, taste, and adjust seasoning as necessary. Serve with your favourite toppings.
