RECIPE FOR BEEF SHORT RIB COOKED IN SLOW COOKER
Slow-cooked beef short ribs are a comforting and flavourful dish that’s easy to prepare. Here’s a simple recipe to guide you:
Ingredients:
- 2 lbs (approximately 900g) bone-in beef short ribs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup (240ml) beef broth
- 1 cup (240ml) red wine (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
Instructions:
- Sear the Short Ribs:
-
- Season the short ribs generously with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the short ribs in batches, searing each side for about 2-3 minutes until browned. Transfer the seared ribs to the slow cooker.
- Prepare the Aromatics:
-
- In the same skillet, add the chopped onion and minced garlic. Sauté over medium heat for about 3 minutes until softened.
- Stir in the tomato paste, cooking for an additional 2 minutes to develop its flavour.
- Deglaze and Combine:
-
- If using, pour in the red wine, scraping the bottom of the skillet to release any browned bits. Allow it to simmer for 2-3 minutes to reduce slightly.
- Add the beef broth, Worcestershire sauce, dried thyme, and bay leaf. Stir to combine.
- Slow Cook:
-
- Pour the mixture over the short ribs in the slow cooker.
- Cover and cook on low for 6-8 hours, or until the meat is tender and easily pulls away from the bone.
- Serve:
-
- Remove the short ribs from the slow cooker and set aside.
- If desired, strain the cooking liquid to remove solids, then return it to the slow cooker and simmer until it reaches your preferred consistency.
- Serve the short ribs with the sauce spooned over them.
This recipe yields tender, flavourful short ribs perfect for pairing with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
