RECIPE FOR SWEET AND SOUR MEATBALLS IN SLOW COOKER
Here’s a simple and delicious recipe for sweet and sour meatballs cooked in a slow cooker:
Ingredients:
- 28 oz (approximately 800g) frozen meatballs
- 20 oz (approximately 570g) can of pineapple chunks in 100% juice (reserve the juice)
- 1 green bell pepper, diced into chunks
- 1 cup brown sugar
- 2/3 cup vinegar
- 2 tablespoons soy sauce
- 3 tablespoons corn-starch
Instructions:
- Prepare the Sauce: In a medium bowl, whisk together the reserved pineapple juice, brown sugar, vinegar, soy sauce, and corn-starch until the mixture is smooth and the corn-starch is fully dissolved.
- Assemble in Slow Cooker: Place the frozen meatballs into the slow cooker. Add the pineapple chunks and diced green bell pepper on top.
- Add Sauce: Pour the prepared sweet and sour sauce over the meatballs, pineapple, and bell pepper.
- Cook: Cover and cook on low for 2 hours. After 2 hours, switch the slow cooker to high and cook for an additional hour to thicken the sauce.
- Serve: Once done, stir the mixture gently and serve the sweet and sour meatballs over rice or enjoy them as an appetizer.
