Teriyaki Salmon

Preparation Time : 10 minutes plus marinating

Cooking Time : 15 minutes

Serves : 4

Ingredients :

450g/1 lb skinless salmon fillet

2 tbsp olive oil

chopped spring onion tips to garnish

For the Marinade :

6 tbsp teriyaki sauce

1 tbsp rice wine vinegar

1 tbsp tomato puree

a few drops of Tabasco sauce

grated rind of 0.5 lemon

0.25 tsp salt

black pepper

Preparation :

  1. Cut the salmon into thick slices with a sharp knife, then put the slices into a shallow dish
  2. Combine the ingredients for the marinade and pour the mixture over the salmon. Turn until well coted, then cover and leave to marinate in the fridge for 30 minutes
  3. Heat the oil in a non stick frying pan. Drain the salmon and reserve the marinade. Add the salmon to the pan and cook over a medium heat for 6-10 minutes, turning once, until just cooked in the centre. Set aside on a plate and keep covered.
  4. Add the marinade to the pan, Increase the heat and boil rapidly until mixture thickens slightly. Serve with salmon and garnish with spring onion tips.

Variations :

For a change, replace salmon fillets with the same weight of tuna or swordfish steaks. Marinate and cook as above

Accompany with :

Rice and stir fried vegetables
